Thanks to Ferenc for his help on Jabber, I have answers:

In Asgard, click "Metadata", then check the "Hide from navigation"
checkbox, and save.

In Midgard, in the Folder menu, select "Arrange navigation items", set
the sort to "Manually ordered", and drag & drop the entries into the
desired order.
