A slighty oversimplified explanation: A microphone is basically a 'reversed' speaker, it converts motion (vibrations on the membrame) to power (current through the wire). If you know that the plug in the device has a microphone-input wired up to the earphone socket, you can use and earphone as a microphone. So if the hardware supports it (the wires in the socket connect to a pin on the chip that can record), you can use both a normal microphone and an earplug as a means to record sound. It all depends on the internal wiring and the configurability of the chip.
