I believe GTalk is based on jabber/xmpp which is a strictly 
client-server protocol and so STUN is redundant. That is, the
IM portional always connects to a publicly addressable server,
just like a web or email client. The VOIP session is negotiated
over the IM connection, but then the clients try to exchange the
audio data directly to avoid burdening the IM server and it is
just for this that STUN and NAT traversal are important.
