gconfv4l2src does indeed flip the output when you rotate the camera,
so if it doesn't it's probably bug somewhere (in sardine?). Bugzilla
might be a good place to report this (with more details on what you
did and what is the goal).

No, but it can be pretty trivially compiled & deployed on the device.
Just 'apt-get source' the gst-plugins-good package and go to the
videoflip directory, 'make' and copy the resulting .so from .libs in
that directory to /usr/lib/gstreamer-0.10 and away you go. Not sure if
the performance is acceptable, but flipping the video sounds like a
pretty straightforward operation so it should be fine...
