Check out the Linux-USB Gadget API (www.linux-usb.org/gadget/). 
You'll need to find a way to remove the file storage gadget (if it's
compiled as a module then simply 'rmmod g_file_storage && insmod
g_ether' on the device.. then 'ifconfig usb0').  If it's
built into the devices kernel, as opposed ot being a module, then
you'll need to see about building a new kernel, not looked at this yet
so can't really offer any advice on that one.
