The order of adding accounts doesn't make a difference, but I'll illustrate
this way:  I add an MSN account via the presence applet, using my Gmail address
to sign in.  I enter the other relevant details (e.g. password), complete the
wizard, and login.  My contact list loads, and all functions as expected.  When
viewing a contact card, it shows the MSN field with their correct address
entered in it.  Now, I add a Google Talk account, in a similar fashion, and
with the same e-mail address (I just happen to use the same address for both
accounts).  Upon logging in again, my Google Talk contact list loads as well. 
Now, if I go to an MSN contact's card, it shows two "Google Talk" fields, one
of them empty, and one replacing the "MSN" field, populated with their MSN
address.  Clicking "Add field" now doesn't show MSN as an option.  When I click
on an MSN contact and select Chat, I get the standard chat window, with a
Google Talk logo.  Immediately upon loading, it displays a message in the chat
pane saying the contact is not authorized (which is true, technically), and
(locally?) bounces all messages sent to them.  If an MSN contact initiates a
chat /to/ me, I can then converse normally.  Google Talk chats still work as
expected.  If I remove the Google Talk account, everything returns to normal
(including fields, etc.).
It seemed like part of the chat system was in some way keying the accounts by
address, and thus considering (for some purposes) the two accounts to be the
same.  I haven't actually taken a look at the source code, so I don't know if
that's near the mark or not, but I thought I'd throw it out there, anyways.
