With regard to Email, Google Talk and Skype:
This is intended and the same behaviour here. You are expected to change this
either in the Email application or under Settings > IM accounts.

As written the mobile number is read automatically from the SIM card, so after
re-reading this report there is nothing to change, at least not in the Maemo
Contacts application...
