Thanks for the quick response. I couldnt find the gconftool paths to use.. have
they moved? are they still used at all?

However the mc-tool does seem to do its job, even clearing the value:

~ $ mc-tool list
gabble/jabber/mjbroek_40gmail_2ecom0
sofiasip/sip/_32130
spirit/skype/mjbroek0
ring/tel/ring
~ $ mc-tool update sofiasip/sip/_32130 string:local-ip-address=192.168.8.163
~ $ mc-tool show sofiasip/sip/_32130 | grep local-ip-address
      (string) local-ip-address = 192.168.8.163

~ $ mc-tool update sofiasip/sip/_32130 clear:local-ip-address       
~ $ mc-tool show sofiasip/sip/_32130 | grep local-ip-address
~ $ 

It should be easy to change the up/down scripts with these commands. 

Eventually I was able to sip connect over openvpn.. thanks!
