Hm, I just created an account successfully as follows:

1. Open Settings -> VoIP and IM accounts.
2. Tap "New".
3. Tap "Jabber".
4. Tap "Register new account".
5. Enter <username>@jabber.ccc.de and the same password in both fields.
6. Tap "Register".

Note that the correct server for that domain is:

$ host -t srv _xmpp-client._tcp.jabber.ccc.de.
_xmpp-client._tcp.jabber.ccc.de has SRV record 5 0 5222 jabberd.jabber.ccc.de.

It's usually (ie, unless the domain's DNS is known-broken) best to let the
client figure it out on its own.
